Earl Grey Shortbread Cookies

This particular recipe doesn’t need to be just for the holidays, really it could be all year long. Or maybe when you’re planning an annual binge of Downton Abbey. I’ve adapted my grandmother’s shortbread recipe by adding some spoonfuls of earl grey tea and lavender for a different take.

Note - I’ve found lavender to be quite potent in flavour so I would add half the measurement to not go too overboard on lavender taste.

Earl Grey Shortbread with a drizzled lemon glaze

Recipe

Cookies

• 2 cups flour

• 1/2 cup icing sugar

• 1 1/2 tbsp cornstarch

• 2 tbsp Earl Grey tea

• 1 tsp lemon zest

• 1 cup unsalted butter

Lemon Glaze

• 1 cup icing sugar

• 2 - 2 1/2 tbsp lemon juice

• Lemon zest

Makes approximately 24 cookies

Instructions

• Preheat oven to 325°F (160°C) and line your baking sheet with parchment paper.

• Sift together flour, cornstarch, icing sugar and earl grey tea leaves. (Loose leaf tea works great, otherwise I cut open my tea bags and pour them on in.)

• With a wooden spoon (or by hand as my grandmother recommends), blend in butter until a soft, smooth dough forms.

• Turn onto counter and gently roll with a lightly floured rolling pin to 1/4" - 1/2” thickness. Cut out with your favourite Christmas cookie cutters and place on the prepared cookie sheets.

• Bake for 10-12 minutes, until very lightly browned. Remove from cookie sheet and ;et cool on wire rack.

• Drizzle lemon glaze over cooled cookies, then dust with icing sugar if you wish. (Don’t get impatient and glaze on hot cookies…it’ll be a sugary mess.)

• And now enjoy with a cup of tea and maybe a phone call to your granny!
